- 1 lb boneless skinless chicken thighs
- 1 cup plain full-fat yogurt
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 14 oz can crushed tomatoes
- 14 oz can coconut milk
- 2 tbsp garam masala
- 1 tsp cumin powder
Instructions
- Marinate the chicken by mixing yogurt, garlic, ginger, garam masala, cumin powder, salt, and pepper in a bowl. Add the chicken and coat well. Refrigerate for at least 1 hour or overnight.
- Heat oil in a skillet over medium-high heat. Sear the marinated chicken until browned (about 5-7 minutes). Remove and set aside.
- In the same skillet, sauté diced onions until golden brown (6-8 minutes). Stir in crushed tomatoes and coconut milk; bring to a boil.
- Reduce heat and add remaining spices; simmer for about 10 minutes.
- Return chicken to the skillet and let it simmer together for another 10 minutes.
- Serve garnished with fresh cilantro alongside basmati rice or naan.
