Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 cup plain full-fat yogurt
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 14 oz can crushed tomatoes
  • 14 oz can coconut milk
  • 2 tbsp garam masala
  • 1 tsp cumin powder

Instructions

  1. Marinate the chicken by mixing yogurt, garlic, ginger, garam masala, cumin powder, salt, and pepper in a bowl. Add the chicken and coat well. Refrigerate for at least 1 hour or overnight.
  2. Heat oil in a skillet over medium-high heat. Sear the marinated chicken until browned (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté diced onions until golden brown (6-8 minutes). Stir in crushed tomatoes and coconut milk; bring to a boil.
  4. Reduce heat and add remaining spices; simmer for about 10 minutes.
  5. Return chicken to the skillet and let it simmer together for another 10 minutes.
  6. Serve garnished with fresh cilantro alongside basmati rice or naan.
