Ingredients

  • 2 lbs beef chuck roast
  • 5 dried guajillo chiles
  • 1 yellow onion
  • 4 garlic cloves
  • 2 tsp cumin powder
  • 4 cups low-sodium beef broth
  • Corn tortillas
  • Fresh cilantro, diced onions, lime (for serving)

Instructions

  1. Soak the guajillo chiles in hot water for 15 minutes until softened. Blend with onion, garlic, cumin powder, and half the beef broth until smooth.
  2. Cut the beef into chunks and marinate in half of the blended mixture for at least 4 hours or overnight.
  3. In a large pot over medium heat, combine marinated beef with the remaining marinade and add additional broth if needed. Simmer on low for about 3 hours until the meat is tender.
  4. Shred the beef using forks and warm tortillas on a skillet. Assemble by filling tortillas with shredded beef and topping with onions, cilantro, and lime juice.
