Ingredients
- 2 lbs beef chuck roast
- 5 dried guajillo chiles
- 1 yellow onion
- 4 garlic cloves
- 2 tsp cumin powder
- 4 cups low-sodium beef broth
- Corn tortillas
- Fresh cilantro, diced onions, lime (for serving)
Instructions
- Soak the guajillo chiles in hot water for 15 minutes until softened. Blend with onion, garlic, cumin powder, and half the beef broth until smooth.
- Cut the beef into chunks and marinate in half of the blended mixture for at least 4 hours or overnight.
- In a large pot over medium heat, combine marinated beef with the remaining marinade and add additional broth if needed. Simmer on low for about 3 hours until the meat is tender.
- Shred the beef using forks and warm tortillas on a skillet. Assemble by filling tortillas with shredded beef and topping with onions, cilantro, and lime juice.
