Description

Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Granulated sugar
  • Cream cheese
  • Sour cream
  • Eggs
  • Vanilla extract
  • Fresh strawberries

Instructions

  1. Preheat oven to 325°F (160°C) and lightly grease an 8-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar; press the mixture firmly into the bottom of the prepared pan.
  3. Combine sliced strawberries with sugar in another bowl and let sit for 10 minutes to create a syrupy sauce.
  4. Beat softened cream cheese until smooth, gradually adding granulated sugar. Mix in sour cream, then add eggs one at a time on low speed.
  5. Pour half of the cheesecake mixture over the crust, drizzle with strawberry sauce, and gently swirl with a knife. Add remaining batter on top.
  6. Bake for 50-60 minutes until edges are set but center jiggles slightly. Turn off the oven and leave the cheesecake inside for an additional hour to cool.
