- 2 tbsp olive oil

Instructions
- 1. Prep your ingredients: dice onions, carrots, and celery; mince garlic.
- 2. In a large pot over medium heat, warm olive oil. Add onion, carrot, and celery; sauté for 5-7 minutes until softened.
- 3. Stir in minced garlic, cumin, and thyme; cook for another minute until fragrant.
- 4. Add rinsed lentils, vegetable broth, and canned tomatoes. Stir well to combine.
- 5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- 6. Taste and adjust seasoning with salt and pepper; add more broth if needed for desired consistency.
