Ingredients

  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Prep your ingredients: dice onions, carrots, and celery; mince garlic.
  2. 2. In a large pot over medium heat, warm olive oil. Add onion, carrot, and celery; sauté for 5-7 minutes until softened.
  3. 3. Stir in minced garlic, cumin, and thyme; cook for another minute until fragrant.
  4. 4. Add rinsed lentils, vegetable broth, and canned tomatoes. Stir well to combine.
  5. 5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
