Ingredients

  • 4 large eggs
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy cream
  • 8 oz high-quality dark chocolate
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 325°F (160°C). In a saucepan, warm the milk and sugar over medium heat until the sugar dissolves.
  2. Whisk eggs and vanilla in a bowl. Gradually add the warm milk mixture while whisking to avoid scrambling the eggs.
  3. Pour the custard into ramekins placed in a baking dish filled with hot water. Bake for 30-35 minutes until set but slightly jiggly.
  4. For ganache, chop dark chocolate and place in a bowl. Heat heavy cream to simmering and pour over chocolate; let sit before stirring smooth.
  5. Stir in butter until melted. Cool slightly and pour over cooled custards.
  6. Refrigerate for at least two hours before serving.
