- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- Spices: cumin, paprika, bay leaf
- Salt & pepper to taste
Instructions
- Rinse lentils under cold water until clear. Chop carrots, celery, onion, and mince garlic.
- In a large pot over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
- Stir in lentils, diced tomatoes, and spices; cook for 2 minutes.
- Pour in vegetable broth and add bay leaves. Bring to a boil, then reduce heat to low and let simmer.
- Cook for 25–30 minutes until lentils are tender but not mushy. Remove bay leaves before serving. Adjust seasoning if needed.
