  • 4 large bell peppers (any color)
  • 1 pound lean ground beef
  • 1 cup cooked rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Set aside.
  3. In a skillet over medium heat, sauté chopped onion until translucent. Add minced garlic and cook for an additional 30 seconds.
  4. Add ground beef and Italian seasoning; cook until browned, draining excess fat if needed.
  5. Mix in cooked rice and tomato sauce; let simmer for 5 minutes.
  6. Generously stuff each pepper with the beef mixture, placing them upright in a baking dish.
  7. Top with shredded cheese and cover with foil. Bake for 25-30 minutes until heated through and cheese is bubbly.
