Ingredients

  • Fresh Raspberries
  • Mascarpone Cheese
  • Ladyfingers
  • Powdered Sugar
  • Cocoa Powder
  • Lemon Juice

Instructions

  1. Rinse raspberries and pat dry.
  2. In a saucepan, combine half the raspberries with powdered sugar and lemon juice. Cook over medium heat for 5 minutes until thickened into sauce.
  3. In a bowl, whisk mascarpone cheese with remaining powdered sugar and one tablespoon of lemon juice until smooth.
  4. Quickly dip each ladyfinger into the raspberry sauce to soak without making them soggy.
  5. Layer soaked ladyfingers in a serving dish, followed by half of the mascarpone mixture; repeat layers.
  6. Cover with plastic wrap and refrigerate for 4 hours or overnight. Dust with cocoa powder before serving.
