Ingredients

  • 1 lb lean ground beef
  • 1 medium onion
  • 1 can (15 oz) canned corn
  • 1 can (15 oz) black beans (drained)
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1 packet taco seasoning
  • 2 cups shredded sharp cheddar cheese
  • 1 bag (32 oz) frozen tater tots

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, brown the ground beef with chopped onion over medium heat until no longer pink. Drain excess fat.
  3. Stir in drained corn, rinsed black beans, diced tomatoes, and taco seasoning until combined and heated through.
  4. Layer half of the meat mixture in the baking dish, sprinkle with half the cheddar cheese, and cover with frozen tater tots.
  5. Pour the remaining meat mixture on top and finish with the remaining cheddar cheese.
  6. Bake uncovered for 30-35 minutes until bubbly and golden brown.
