- 1 can (15 oz) canned corn
- 1 can (15 oz) black beans (drained)
- 1 can (14.5 oz) diced tomatoes (undrained)
- 1 packet taco seasoning
- 2 cups shredded sharp cheddar cheese
- 1 bag (32 oz) frozen tater tots
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet, brown the ground beef with chopped onion over medium heat until no longer pink. Drain excess fat.
- Stir in drained corn, rinsed black beans, diced tomatoes, and taco seasoning until combined and heated through.
- Layer half of the meat mixture in the baking dish, sprinkle with half the cheddar cheese, and cover with frozen tater tots.
- Pour the remaining meat mixture on top and finish with the remaining cheddar cheese.
- Bake uncovered for 30-35 minutes until bubbly and golden brown.
