  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • sour cream
  • chopped green onions
  • fresh cilantro

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, brown the ground beef with the onion until cooked through. Stir in garlic and cumin; cook until fragrant.
  3. Add half of the enchilada sauce to the beef mixture, stirring well to coat. Simmer for 5 minutes.
  4. Spoon some of the beef mixture onto each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a greased baking dish.
  5. Pour remaining enchilada sauce over rolled tortillas and top with more cheese. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
  6. Garnish with sour cream, green onions, and cilantro before serving.
