- 3–4 boneless skinless chicken breasts
- 2 bell peppers (red and yellow)
- 1 medium onion
- 3 garlic cloves
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 cups long-grain white or brown rice
- Juice of 1 lime
- Olive oil, salt, and pepper
Instructions
- Slice bell peppers and onion into thin strips. Mince garlic.
- Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and paprika; cook until golden brown (about 6-7 minutes per side). Remove from skillet.
- In the same skillet, sauté onions, bell peppers, and garlic for 5-6 minutes until softened.
- Dice cooked chicken and return to skillet. Add lime juice and stir to combine.
- Prepare rice according to package instructions.
- Serve the chicken fajita mixture over rice bowls. Garnish with cilantro or avocado if desired.
