Ingredients

  • 34 boneless skinless chicken breasts
  • 2 bell peppers (red and yellow)
  • 1 medium onion
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 cups long-grain white or brown rice
  • Juice of 1 lime
  • Olive oil, salt, and pepper

Instructions

  1. Slice bell peppers and onion into thin strips. Mince garlic.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and paprika; cook until golden brown (about 6-7 minutes per side). Remove from skillet.
  3. In the same skillet, sauté onions, bell peppers, and garlic for 5-6 minutes until softened.
  4. Dice cooked chicken and return to skillet. Add lime juice and stir to combine.
  5. Prepare rice according to package instructions.
  6. Serve the chicken fajita mixture over rice bowls. Garnish with cilantro or avocado if desired.
