Ingredients

  • 12 oz pasta (spaghetti or penne)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups fresh basil leaves
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a skillet over medium heat, sauté minced garlic until fragrant (about 1 minute).
  3. Add canned diced tomatoes (with juice) to the skillet and simmer for about 5 minutes until slightly thickened.
  4. Lower the heat, stir in heavy cream, and warm gently while stirring occasionally.
  5. Mix the cooked pasta into the sauce along with torn basil leaves, ensuring every piece is coated.
  6. Finish by stirring in grated parmesan cheese. Adjust consistency with reserved pasta water if necessary.
