  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar (divided)
  • 2 cups all-purpose flour (divided)
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of one lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix 1 cup of flour, 1/2 cup sugar, and softened butter until crumbly; press into the bottom of the dish. Bake for 15 minutes.
  3. In another bowl, whisk together the remaining sugar, eggs, lemon juice, zest, and the remaining flour until smooth.
