Instructions
- Preheat the oven to 450°F (230°C). Halve red bell peppers, remove seeds, and place cut-side down on a parchment-lined baking sheet.
- Roast for about 20 minutes until skins are charred.
- While cooling, chop garlic and toast almonds in a skillet over medium heat until golden brown.
- In a food processor, blend roasted peppers (removing skins), tomatoes, garlic, almonds, smoked paprika, vinegar, salt, and pepper until smooth.
- Gradually drizzle in olive oil while blending to achieve a creamy consistency.
- Taste and adjust seasoning if necessary.
