Ingredients

  • Red Bell Peppers
  • Tomatoes
  • Almonds
  • Garlic
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Smoked Paprika

Instructions

  1. Preheat the oven to 450°F (230°C). Halve red bell peppers, remove seeds, and place cut-side down on a parchment-lined baking sheet.
  2. Roast for about 20 minutes until skins are charred.
  3. While cooling, chop garlic and toast almonds in a skillet over medium heat until golden brown.
  4. In a food processor, blend roasted peppers (removing skins), tomatoes, garlic, almonds, smoked paprika, vinegar, salt, and pepper until smooth.
  5. Gradually drizzle in olive oil while blending to achieve a creamy consistency.
