Description

Ingredients

  • Fresh Spinach
  • Crumbled Feta Cheese
  • Large Eggs
  • Olive Oil
  • Salt & Pepper

Instructions

  1. Wash the spinach thoroughly and pat dry.
  2. Whisk three large eggs with salt and pepper until frothy in a bowl.
  3. Heat olive oil in a nonstick skillet over medium heat, then sauté the spinach until wilted (about 2 minutes).
  4. Sprinkle crumbled feta over the sautéed spinach.
  5. Pour the whisked eggs into the skillet, tilting to spread evenly.
  6. Cook on medium-low heat until edges are set but center is slightly runny (approximately 3 minutes). Use a spatula to gently lift the edges.
  7. Serve hot, either folded or slid onto plates.
