Instructions
- Wash the spinach thoroughly and pat dry.
- Whisk three large eggs with salt and pepper until frothy in a bowl.
- Heat olive oil in a nonstick skillet over medium heat, then sauté the spinach until wilted (about 2 minutes).
- Sprinkle crumbled feta over the sautéed spinach.
- Pour the whisked eggs into the skillet, tilting to spread evenly.
- Cook on medium-low heat until edges are set but center is slightly runny (approximately 3 minutes). Use a spatula to gently lift the edges.
