  • 1 pound ground beef (or turkey/chicken for lighter options)
  • 1 cup cooked rice or quinoa
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Cumin or Italian herbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in a greased baking dish.
  3. In a skillet over medium heat, sauté onions and garlic until fragrant. Add ground meat and cook until browned.
  4. Stir in cooked rice/quinoa and diced tomatoes; season with salt, pepper, and desired spices.
  5. Fill each pepper with the meat mixture and pack it lightly.
  6. Cover with foil and bake for about 30 minutes; remove foil during the last 10 minutes to melt cheese on top.
