  • 1 lb boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 3 oz ramen noodles (fresh or dried)
  • 2 cloves fresh garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Sriracha sauce (adjust to taste)
  • 1 cup coconut milk
  • 2 green onions, sliced
  • 1 tsp sesame oil

Instructions

  1. Cut chicken thighs into bite-sized pieces and season with salt and pepper.
  2. In a pot over medium heat, sauté minced garlic in oil until fragrant. Add chicken and cook until browned.
  3. Pour in chicken broth, soy sauce, and Sriracha; bring to a simmer.
  4. Stir in coconut milk and simmer for another 5 minutes.
  5. Cook ramen noodles separately according to package instructions; drain.
  6. To serve, place noodles in bowls, ladle the spicy broth over them, and top with green onions and sesame oil.
