- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup bell peppers, diced (mixed colors)
- 1/2 cup red onion, diced
- 1 can (15 oz) black beans, rinsed
- 1 cup corn (fresh or frozen)
- Juice of 1 lime
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup rice (white or brown)
- 1/4 cup cilantro, chopped
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- Season chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
- In the same skillet, sauté diced bell peppers and red onion until tender (about 5 minutes).
- Stir in rinsed black beans and corn; cook for an additional 2-3 minutes.
- Cook rice according to package instructions.
- Slice the rested chicken into strips.
- Assemble bowls by layering rice, sliced chicken, sautéed veggies, black beans, corn, cilantro, cheese, lime juice, and a dollop of sour cream.
