  • 1 cup graham cracker crumbs
  • 1/4 cup Dutch-processed cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup dark chocolate chips
  • 2 cups fresh raspberries
  • 3 large eggs
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter until combined. Press mixture into the bottom of the prepared dish.
  3. Melt dark chocolate chips in a microwave-safe bowl in 30-second increments until smooth.
  4. In another bowl, whisk eggs with sugar and vanilla until frothy. Fold in the melted chocolate until fully combined.
  5. Gently fold in fresh raspberries, being careful not to crush them.
  6. Pour filling over the crust and bake for 25-30 minutes or until set but slightly soft in the center.
  7. Let cool completely on a wire rack, then refrigerate for at least two hours before slicing.
