  • 8 oz dark chocolate (minimum 70% cocoa)
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 cup heavy cream (well chilled)
  • 1 tsp pure vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • For Topping: chocolate shavings and fresh berries (raspberries or strawberries)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water until smooth. Let cool slightly.
  3. In a separate bowl, whisk sugar and eggs together for about 5 minutes until pale and fluffy. Gently fold in the melted chocolate mixture.
  4. In another bowl, whip heavy cream with vanilla extract until soft peaks form. Carefully fold into the chocolate mixture.
  5. Pour half of the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before removing from the pan.
  6. Spread remaining mousse layer on top and refrigerate for at least two hours before serving, garnished with chocolate shavings and fresh berries.
