Description

Luscious Lemon Raspberry Swirl Cheesecake is a creamy, indulgent dessert that perfectly balances zesty lemon and sweet raspberries, making it an irresistible treat for any occasion.


Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Cream cheese
  • Granulated sugar
  • Fresh lemons (zest and juice)
  • Raspberry puree
  • Eggs
  • Sour cream
  • Vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C). Mix graham cracker crumbs with melted butter until combined and press into the bottom of a springform pan.
  2. In a separate bowl, beat softened cream cheese until smooth. Gradually mix in sugar until fluffy.
  3. Add fresh lemon zest, juice, sour cream, and vanilla extract to the cream cheese mixture. Blend until smooth.
  4. Fold raspberry puree into one-third of the cheesecake batter gently to create swirls.
  5. Pour half of the plain cheesecake batter into the crust, followed by spoonfuls of raspberry batter. Alternate layers until all batter is used.
  6. Bake for about 60 minutes or until set but slightly jiggly in the center.
  7. Turn off the oven and leave the cheesecake inside with the door ajar for an hour, then refrigerate overnight.
