  • 1 cup strong espresso or coffee
  • 16 oz mascarpone cheese
  • ½ cup granulated sugar
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract

Instructions

  1. Brew 1 cup of strong espresso and let it cool.
  2. In a bowl, beat mascarpone cheese and sugar until smooth (3-4 minutes).
  3. Stir in vanilla extract.
  4. Briefly dip ladyfingers into the coffee mixture.
  5. Layer soaked ladyfingers in a dish, followed by half of the mascarpone mixture. Dust with cocoa powder.
  6. Repeat layering and finish with cocoa powder. Chill for at least 4 hours.
