Ingredients

  • Baking Powder
  • Ground Cinnamon
  • Eggs
  • Milk

  • Vanilla Extract
  • Brown Sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Melt the butter and let it cool slightly. In another bowl, mix eggs, milk, vanilla extract, and melted butter until smooth.
  4. Gently combine wet and dry ingredients; do not overmix.
  5. Fill muffin cups about two-thirds full with batter.
  6. Mix brown sugar and additional cinnamon for topping; sprinkle on muffins before baking.
  7. Bake for 18-20 minutes or until golden brown; a toothpick inserted should come out clean.
