  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 1 cup queso cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, chopped
  • 1 medium onion, finely chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Gather all ingredients before starting.
  2. Heat olive oil in a skillet over medium-high heat. Sear the steak pieces for about 5-7 minutes until browned on all sides. Remove and set aside.
  3. In the same skillet, sauté onions and bell peppers until soft (4-5 minutes).
  4. Stir in cumin, chili powder, paprika, and uncooked rice; mix well.
  5. Add broth or water according to rice package instructions and cook until rice is tender (about 15-20 minutes).
  6. Once the rice is done, mix in queso cheese until melted and creamy.
  7. Return the cooked steak to the skillet and combine everything gently.
  8. Serve hot, garnished with fresh cilantro and lime wedges.
