  • 28 oz canned crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ cup red wine (optional)
  • 8 oz spaghetti (whole wheat or gluten-free)
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent (3-4 minutes).
  2. Add crumbled tempeh; cook until golden brown (5-7 minutes), allowing it to absorb flavors.
  3. Stir in diced carrots; cook until softened.
  4. Pour in crushed tomatoes and add oregano and basil. Simmer for about 15 minutes to meld flavors.
  5. Season with salt and pepper. For added depth, stir in red wine if desired.
  6. Cook spaghetti according to package instructions until al dente; drain well.
  7. Toss cooked spaghetti with the Bolognese sauce until evenly coated. Serve hot.
