  • 2 cups low-sodium vegetable broth
  • 1 cup bell peppers (chopped)
  • 1 medium zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 34 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • Olive oil for sautéing

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a large skillet, heat olive oil over medium heat and sauté chopped bell peppers and zucchini for about 5 minutes.
  3. Add minced garlic and oregano; cook for an additional minute until fragrant.
  4. Stir in rinsed rice and vegetable broth; bring to a boil.
  5. Reduce heat to low, cover, and simmer for around 15 minutes or until liquid is absorbed and rice is tender.
  6. Fold in halved cherry tomatoes, cover again for 5 minutes to warm through.
  7. Fluff the rice mixture with a fork before serving.
