Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • ½ cup fresh parsley, finely chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until the water runs clear. In a pot, combine quinoa with 2 cups of water. Bring to a boil over medium heat.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Let sit covered for an additional 5 minutes before fluffing with a fork.
  3. While quinoa cools, chop cucumber, cherry tomatoes, red bell pepper, red onion, and parsley into bite-sized pieces.
  4. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  5. In a large bowl, combine cooled quinoa with chopped veggies. Drizzle dressing over the top and toss gently until well mixed.
  6. Serve immediately or chill in the fridge for an hour before serving.
